Chicken Karahi


 Chicken karahi is a popular Pakistani and North Indian dish made with marinated chicken cooked in a spicy tomato-based curry. Here is a recipe for making chicken karahi:

Ingredients:

  • 1.5 lbs bone-in chicken, cut into pieces
  • 3 tbsp vegetable oil
  • 2 medium-sized onions, chopped
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 2-3 tomatoes, chopped
  • 2 green chilies, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala powder
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions:

  1. In a large mixing bowl, add the chicken pieces, salt, turmeric powder, and red chili powder. Mix well and let the chicken marinate for at least 30 minutes.

  2. In a large karahi or a deep pan, heat vegetable oil over medium-high heat.

  3. Add the cumin seeds and let them crackle for a few seconds.

  4. Add the chopped onions and sauté until they become translucent.

  5. Add ginger and garlic paste and sauté for another 1-2 minutes.

  6. Add the chopped tomatoes and green chilies, and cook until the tomatoes are soft and pulpy.

  7. Add the marinated chicken and mix well.

  8. Add coriander powder, garam masala powder, and salt to taste.

  9. Mix well and cover the karahi or pan with a lid. Cook on medium heat for 20-25 minutes or until the chicken is fully cooked.

  10. Remove the lid and cook for another 5-7 minutes until the gravy thickens.

  11. Garnish with fresh cilantro leaves and serve hot with naan or rice.
